GRAPES: Cabernet Sauvignon.
PRODUCTION AREA: company vineyards at Case Bianche in Susegana (TV).
SOIL: calcareous, clayey, with sandstone subsoil.
EXPOSURE: south, south-west.
ALTITUDE: 250 m a.s.l.
TRAINING SYSTEM: Guyot
PLANTING DENSITY: 4.500 vines per hectare.
YIELD: 10.000 Kg/hectare.
HARVEST: grapes are hand-picked during the first ten days of October.
VINIFICATION: pressing and destemming followed by fermentation in stainless steel tanks with maceration for 10-12 days at 28°C and daily pumping over.
AGING: aged for 8-10 months in 30 hl Slavonian oak barrels.
BOTTLING: after aging in barrels, approximately one year after the harvest.
COLOUR: vibrant red.
AROMA: intense and fruity, slightly grassy.
FLAVOUR: velvety, with just the right amount of tannins.
SERVING SUGGESTIONS: excellent with roasts and meat dishes in general.
SERVING TEMPERATURE: 16-17°C
