Prosecco Superiore Brut “Vigna del Cuc” Conegliano Valdobbiadene DOCG

At a first glance, Vigna del Cuc stands out thanks to its bright straw yellow, but also reveals all its “brut” personality with a fine, silky and persistent perlage, obtained through a long re-fermentation process. Its pleasant and fruity aroma offers refreshing hints of green apple. Its structured grapes make Vigna del Cuc finely sapid and fleshy: it is dry and harmonious to the palate, while its enjoyable foam leaves a long-lasting tinkling of bubbles. The low residual sugar allows a pleasant mineral note. Excellent as an aperitif, Vigna del Cuc is to be served at 8 °C. Given its good acidity level, it can be used to balance out cold cuts, cured meats and fatty dishes, but it can also accompany an entire meal with lighter and more delicate dishes.

GRAPES: Glera (90-95%), Chardonnay (5-10%), depending
on the year.
PRODUCTION AREA: the company’s “Cuc” vineyards at Case Bianche in Susegana (TV).
SOIL: calcareous, clayey, with sandstone subsoil.
ALTITUDE: 250 m a.s.l.
TRAINING SYSTEM: vertical trellised
PLANTING DENSITY: 3.000 vines per hectare.
YIELD: 13.500 Kg/hectare.
HARVEST: grapes are hand-picked during the second half of September.
VINIFICATION: destemming and soft pressing followed by temperature-controlled fermentation.
SECONDARY FERMENTATION: conducted according to the Italian method, with secondary fermentation in an autoclave for approximately 60 days at a constant temperature of 16-18°, followed by filtration and cold stabilization.
BOTTLING: isobaric bottling, after sterile filtration of the sparkling wine.
APPEARANCE: brilliant, with a fine and persistent perlage.
COLOUR: straw yellow.
AROMA: pleasing with a characteristic fruitiness and scents of green apple.
FLAVOUR: dry and harmonious, slightly tangy, pleasing and lingering.
SERVING SUGGESTIONS: excellent as an aperitif, it is also the perfect accompaniment to light and delicate dishes.
