“UNDICI” Prosecco Superiore Dry

Produced among the gentle hills of the province of Treviso, Undici, one of the most precious wines of Col Sandago Estate, today represents the most authentic essence of Conegliano Valdobbiadene DOCG by becoming a “Rive di Susegana”, paying tribute to its clay soil which expands over gentle hills and steep slopes, sudden cliffs and deep clefts.
Having always been appreciated as a custodian of the countless expressions and nuances of its territory, Undici acquires the “Rive” designation thanks to the special and limited yield of its grapes and the subsequent exclusive bottle production. The grapes, exclusively grown in this place, on a two-and-a-half-hectare vineyard, are only harvested manually: the name of this “cru”, dedicated to Saint Martin’s day, is rooted in the ancient farming traditions related to 11th November, the day when the land use agreements between landowners and sharecroppers were renewed for the following crop year; and it is also, today, a subtle tribute to Martino Zanetti.


Its bright shade immediately catches the eye: at first sight Undici captivates with its vibrant straw yellow and intrigues with its fine and persistent foam, which releases in the glass and delicately accompanies it to the palate.
The grapes offer a wide variety of fragrances to this sparkling white wine, full of precious fruity and floral aromas pleasantly tickling the nose. The result is a symphony of aromas which is also reflected in its taste: Undici is soft, with good body, persistent and well-balanced, including in terms of acidity.
To be served at 8 °C, this refined Prosecco Superiore “Rive” is an excellent aperitif and a splendid wine for any occasion, to be paired in particular with delicate fruit pastry and focaccia bread.


TYPE: sparkling white wine.
GRAPE VARIETY: 90% Glera, 10% Perera.
PRODUCTION AREA: Tenuta Col Sandago company vineyards in
Susegana (TV).
SOIL: calcareous, clayey with sandstone subsoil, relatively
EXPOSURE: south, south-west.
ALTITUDE: 200-250 m a.s.l.
TRAINING: cappuccina (double-arched cane).
PLANTING DENSITY: 2.500-3.500 vines per hectare.
YIELD: 12.000 Kg/hectare.
HARVEST: grapes are hand-picked during the second half of September.
VINIFICATION: soft pressing, static decantation of the must and temperature-controlled fermentation (16-18°C). Aged in steel tanks for 2-3 months.
SECONDARY FERMENTATION: the base wine is refermented in a temperature-controlled autoclave at a constant temperature of 16-17°C, producing carbon dioxide with a pressure of up to 5 atm. This is followed by filtration and
cold tartaric stabilization.
