Col Sandago’s ancestral soul

The strong identity that binds Col Sandago to its terroir of origin is vigorously expressed in a wine that is ancestral and contemporary at the same time, and which now takes on a new form. From “col fondo” sparkling wine to “col fondo” spumante, here is ANTICO – Conegliano Valdobbiadene Prosecco Superiore DOCGBrut Nature re-fermented in the bottle.

It is made from 100% Glera grapes from vineyards located in the municipality of Susegana, whose clayey soil with a sandstone structure gives it a delicate minerality. The grapes, harvested by hand in the first half of September, undergo de-stemming and cold maceration, after which a soft pressing stage precedes fermentation and aging. But the distinctive character of Antico develops inside the bottle, where the wine re-ferments without any filtration or “dégorgement”, thus preserving the natural yeast deposit inside.

In the glass, its straw yellow color is accompanied by a fine and persistent foam and the fresh and fruity notes that are typical of Prosecco, in addition to the characteristic “bread crust” nuances given by the contact with the yeast. Its fresh, velvety taste, dry and pleasantly bitter on the finish, with a good structure and delicately mineral, makes it excellent for the whole meal and in combination with fish dishes. Because of its intimate nature, Antico pairs wonderfully with cured meats and sausages that are typical of its production area, such as Sopressa.

 Antico is presented in the apparent simplicity of a smooth transparent bottle: the taupe label with golden details contributes to emphasize the ancestral nature and the materiality of this wine, precious because of its tradition and history. This “col fondo” wine testifies to Col Sandago’s commitment, care and gratitude towards the territory where its best grapes originate.
